Why canister pressure drops
A fuel canister works on vapour pressure, and that pressure falls in two situations: as fuel is used up, and as the canister gets cold. An unregulated stove passes that straight through to the burner, so the flame you get on the last third of a canister on a cold morning is noticeably weaker than the one you got on day one.
What a regulator does about it
A regulator sits between the canister and the burner and holds delivery pressure constant across a range of input pressures. The result is a flame that stays roughly the same from a full canister to a nearly empty one, and usable output at temperatures where an unregulated stove would be sputtering.
What it cannot fix
It doesn't repeal physics. Once the canister is cold enough that the fuel can't vaporise at all, a regulator has nothing to regulate. What it does is widen the usable band considerably, which matters most on shoulder-season and alpine trips where mornings are near freezing. In midsummer, it's a refinement rather than a necessity.

Common questions
Is a regulated stove worth it?
In cold weather and on long trips where you'll run canisters down to empty, definitely. For summer weekends where you're swapping canisters while they still have fuel in them, the benefit is small.
Does a regulator help below freezing?
It extends the usable range, but it can't make fuel vaporise that's too cold to vaporise. Below about 20 F you want an inverted remote canister stove or liquid fuel instead.
