How a barometric altimeter works
A barometric altimeter measures air pressure and converts it to height, and it's considerably more precise than GPS elevation, which is the weakest part of a GPS fix. On a climb, a barometric watch will track ascent smoothly while a GPS-only device wanders by tens of feet.
Why it drifts with the weather
The catch is that pressure changes with weather as well as height. A front moving through will shift your indicated altitude by a few hundred feet overnight without you moving at all. That's why these watches want calibrating at a known elevation, and why many now auto-calibrate against GPS periodically to split the difference between the two methods.
Reading the same sensor as a barometer
Read the same sensor the other way and it's a barometer. Hold altitude constant and pressure changes become weather information, which is why these watches offer storm alerts: a rapid pressure drop while you're stationary is a genuine warning worth heeding in the mountains. The compass is a separate magnetometer, and it needs occasional recalibration by waving the watch in a figure of eight. It gives a heading while you're standing still, which is what GPS cannot do.

Trusting altitude without calibrating
Weather moves the reading. Set the watch to a known elevation at the trailhead and again at any marked point you pass, or you'll be reading yesterday's pressure as today's height.
